My son is home with the stomach flu today (poor baby!), so while he’s resting I decided to try my hand at these muffins and they turned out great!!! If you really don’t like cranberries, no worries…just use blueberries or chocolate chips. Or, just leave the berries out entirely and make banana muffins!
Ingredients:
- 6 eggs
- 1/2 cup coconut oil, melted
- 2 tsp vanilla
- 2 ripe bananas, mashed
- 1/4 cup honey
- 1/2 cup coconut flour
- 1/2 tsp sea salt
- 1/4 tsp baking soda
- 1/2 cup cranberries
Preparation:
- Preheat oven to 350F
- Whisk the eggs, mashed banana, coconut oil, shredded coconut, vanilla and honey together in a large mixing bowl (I used a hand mixer and beat on medium speed for about one minute)
- Sift in dry ingredients and mix until well combined
- Gently fold in the cranberries
- scoop 1/4 cup of batter into lined muffin tins
- Bake for 35 minutes
These are so yummy and so healthy. They are also kid, and husband, approved! Enjoy, and as always, have a fantastic day – naturally!
